As I dig deeper into my new food lifestyle I've actually started to enjoy making my own food from scratch. It's more of a control thing, I think. It's up to me what does or does not go into the food and I can eliminate chemicals, preservatives, modify the taste to exactly what I like and what's best for my family. My first attempt was mayonaise, I love mayo it's just so darn delicious and creamy! I recently found organic extra virgin olive oil at my local Marshall's store and it's actually cheaper than some of the non-organic extra virgin olive oils at the grocery store so it was a no brainer. So off to the grocery store I went and I picked up some organic eggs and organic herbs. Now, keep in mind that when making your own mayo it's not going to be that beautiful white color you find at the grocery store it will be yellowish and that's perfectly okay. Also, as with any recipe, you may need to modify how many eggs you put in and there's really no official amount of extra virgin olive oil you use so just use your best judgement. This mayo is delicious, it has a strong olive flavor so if that's not your favorite then supplement with a second oil such as corn, canola or pick your own to cut the strong olive flavor.
Ingredients:
- 3 egg yolks at room temperature
- 2 tsp lemon juice or vinegar
- extra virgin olive oil
- herbs (optional)
- mustard (optional)
- salt to taste
Directions:
To get started grab your blender and make sure you have the little opening in the lid ready to use too. Add the three egg yolks and lemon juice or vinegar in the blender and blend on high until mixed well. Using the opening in the lid, slowly pour the extra virgin olive oil in with the blender on high. When I say slowly, I mean barely a trickle - think of it like mixing oil and water it needs time because it's not a fan of combining. It will start to come together and look like mayo. At this time add in your optional extras and salt, I used some rosemary, thyme and sage give it a quick blend and you're ready to eat. Get creative and enjoy! I quickly made a roasted chicken salad with my new mayo and it was fantastic. I hope you enjoy and please share any fun creations you make!
